The lettuce is frozen, the milk has ice in it, and nobody touched the settings. The instinct is to turn the fridge dial down, and on a great many refrigerators that either does nothing or makes it worse.

The reason is that on most single-compressor refrigerators, which is nearly all of them in a domestic kitchen, the cold is made in one place and shared with the other. The freezer is where the cooling happens. The fresh food compartment gets a portion of that cold air through a passage with an adjustable opening. That opening is often what your fridge control moves, and the amount of cold being made is set by the freezer control.

So the two dials are not two thermostats. Understanding which one you are touching is most of this problem.

What the two controls usually do

Read your own manual before acting, because designs vary and this is a general shape rather than a rule about your model. Your manual is also the document that tells you which of the two arrangements you have, and it is worth ten minutes.

The freezer control typically decides how much cooling the system produces overall.

The fridge control typically decides how much of that cold air is let through into the fresh food compartment, by moving a damper or baffle.

Two consequences follow, and they are the ones nobody explains.

Turning the fridge control colder opens the passage wider, which sends more freezer-temperature air into the fresh food compartment. On a fridge that is already freezing produce, that is the wrong direction.

Turning the freezer control colder makes the air that arrives colder, which can freeze the fridge even though you did not touch the fridge setting at all. A household that put the freezer up a notch in a heatwave, and then found the salad drawer freezing a week later, has usually found the cause.

The three places food freezes, and what each one means

Where in the fridge the ice appears is diagnostic, and it is free information.

At the back wall. The back is where the cold air enters and it is the coldest surface in the compartment. Food touching the back panel can freeze while the rest of the fridge is fine. This is not a fault. It is the geometry of the appliance, and the fix is to stop packing items against the back wall.

Directly under a vent. Same mechanism, different location. Move the item.

Everywhere, including the door. Now it is a setting, a damper, or a control fault, and the checks below apply.

The checks, in order

1. Read both controls and write them down

Before changing anything. Note both settings and the date. If you change something without recording where it was, you cannot go back.

2. Check where the items that froze were sitting

If everything that froze was against the back panel or under a vent, this is a loading problem and not a fault. Rearrange, wait a day, and see.

3. Adjust one control at a time, and wait

Move one setting by one step. Then leave it for a full 24 hours before judging.

A refrigerator does not respond in an hour. It has a large thermal mass and a cycling compressor, and people chase a moving target by adjusting twice in an evening.

4. Put a thermometer in and read it properly

A glass of water in the middle of the fridge, left for several hours, gives a reading with mass behind it. USDA's Food Safety and Inspection Service guidance is that the refrigerator should be at 40 °F or below and the freezer at 0 °F or below, and it recommends keeping an appliance thermometer in both.

That gives you two numbers rather than a feeling, and if you call a technician, they are the numbers that get asked for.

5. Check how full the fridge is

An almost-empty refrigerator has very little thermal mass, so the air temperature swings more between compressor cycles, and items near the cold air path get colder than the average. A very full one has the opposite problem: air cannot circulate and pockets form.

Neither is a fault. Both change the behavior.

6. Check the damper, if you can see it

On many units the fridge control is a visible sliding vent inside the compartment. Look at whether it moves freely and whether it is obstructed by anything stored against it.

Do not force it. A damper that will not move is worth reporting rather than levering.

7. Note whether the freezer is also over-cold

If the freezer is far below 0 °F as well, the whole system is running colder than it should, which points somewhere different from a damper problem. Note the reading.

Where this stops being yours

A control that has no effect at all after 24 hours, in either direction, is a fault rather than a setting, and it is a service call.

Frost building up in the fresh food compartment, rather than food merely freezing, is a symptom worth reporting rather than scraping away repeatedly.

Anything requiring a panel to come off stops at unplugging the appliance, and on most units it stops entirely.

Anything to do with the sealed system, the refrigerant or the compressor is not homeowner territory, and in the United States refrigerant work is regulated.

The reason this matters beyond the lettuce

Freezing and thawing changes food, and refrozen items are a quality question rather than automatically a safety one. USDA's guidance on refreezing is that food may be safely refrozen if it still contains ice crystals or is at 40 °F or below, though its quality may suffer.

That figure is the one to work from rather than a guess, and it is the same 40 °F threshold that runs through everything else in this cluster.

If it turns out to be a fault

The repair-or-replace question is genuinely open rather than settled, and the rule of thumb everybody quotes about half the price of a new one is widely attributed and could not be verified at a primary source.
